Hi,
I recently Joined University Fire Department in Fairbanks Alaska. We don't always have shift meals, and apparently every rookie that comes in just eats complete junk for the majority of their probation.
I've gotten to the point were I don't want to do that anymore, and find most of the things I've been eating repulsive, but I have very little cooking knowledge or experience.
Do you guys know of any fairly easy meals that you can cooks for 1 or keeps alright for leftovers?

Buy a box of macaroni and some jarred tomato gravy.................Boil the water, drop in macaroni and wait about 10 minutes...........in the meantime, dump the red sauce (or whatever other kind of sauce you want to use) into another pot and cook on low heat..............drain macaroni into a collander then put back into the pot that it was cooked in. Dump cooked gravy into pot with cooked macaroni and stir it around...........Serve on plate and whatever you have leftover can be put into a plastic container and reheated at a later time. To reheat, just dump macaroni and gravy into a pan, put a little bit of water in and cook on low. Stir around and keep testing it (tasting) till it's hot enough for you! As a single guy, I LIVED on this! You can also substitute the macaroni for some frozen ravioli, or frozen tortellini.
Another thing you can do is invest in a small George Forman grill (another item that I couldn't live without when I was single!). They're usually pretty cheap and will evenly and perfectly cook a piece of meat (never tried to cook fish on it, but i'm sure you could) in a matter of a few minutes. For a side, you could cook a baked potato, or even some instant mashed potatoes (can buy a serving for 2 in a bag at any grocery store and they're usually very good). For a vegetable, you could do broccoli, or cauliflower, or string beans. Easiest way to do them would be to clean them, then dump them in a pot of boiling water. Cook for 5-8 minutes and drain in a collander. To add some zest, put the cooked vegetable in a pan and saute' with a little olive oil, some chopped garlic and some crushed red pepper (just make sure you go easy on the crushed red pepper)!
2 easy and quick meals that will be pretty easy on your wallet too!

Hamburger (or Tuna) Helper. Very easy, one box & one lb of ground beef (or Tuna) makes probably three-four meals.
Take a large can of Dinty Moore beef stew, get a bag of egg noodles and cook up part of the bag, and serve the stew over the noodles.
Kraft Macaroni & Cheese + one can of chicken (just like the tuna) + Buffalo Wing sauce = Buffalo Chicken Mac & Cheese!

I am flying solo at home, I have a degree in culinary arts, but have become horriablely lazy in my cooking and eatting, but here's my regular staples.
Can of baked beans and kielbasi (or hot dogs)
Baked potatoes with chili & cheese.
Yogurt and granola
Chef salad - lettuce mix, cheese, meat dressing - get real wild and add some croutons.
Bagel with cheese and or lunch meat.
Rice and beans
Burritos or [url="http://en.wikipedia.org/wiki/Quesadilla"]quesadillas[/url] (look up recipes on the web).
Fruit salad
I eat a lot of unsalted peanuts and bananas (high blood pressure)
Grilled cheese and tomato soup.
Egg Sandwich/Breakfast Sandwich
Egg Salad
Pasta Salad
Trail mix is fun too...the local grocery store has pre made ones for $5 that last me two or three days.
Can also make your own with granola, nuts, raisins, and I like peanut butter M&Ms.
Baby Carrots I eat mine plain some folks like them with dressing or dip.
Chips and guacamole is pretty filling. Just watch the serving size.
Drink lots of water (helps ward of cravings)

Oh I don't have one anymore, (ex-wife grabbed it up) but many busy moms I know swear by their crock pots - get yourself a crock pot cookbook. Cooking isn't rocket science it just requires a little bit of planning, good timing and the ability to follow directions.
