This 1967 alf engine was bought by my dad Joel Bain and restored it to a Camden piece as engine 9 its a very nice truck.My dad is the only one that drive it to places it nice. Officer side

  Spinach & Artichoke Dip

Cyber's Spinach & Artichoke Dip



3 cans artichoke hearts - well drained and chopped

3 cups Hellman's REAL mayonnaise

16oz (one of those big family sized cans) grated parmesan cheese

2 packages thawed creamed spinach (preferably in parmesan cheese sauce)

salt and pepper

crackers and/or melba toast to serve with dip



in a large bowl combine 3/4 of the parmesan cheese and all of the mayonnaise

chop artichoke hearts and blend into mixture

blend in creamed spinach then add remainder of parmesan cheese

add a touch of salt and pepper



spread into a glass 13x9 dish and bake for 30 minutes at 350* and serve hot

**optional - top with diced tomatoes**



NOTES

- you can add a 3rd package of creamed spinach to balance out the artichokes but decrease the mayonnaise by 1/2 cup so that the dip isn't runny

- you can choose to add well-drained chopped spinach instead of creamed spinach; use 3 packages of spinach and only 3 cups of parmesan cheese, adding more parmesan for thickening the dip or for taste



If anyone has any other good tweaks to this recipe, don't hesitate to post them...I'd love to try them out. I've thought of thickening the dip further with some mozzarella or swiss cheese but I'll try that with a small recipe first! LOL!
